This morning my daughter insisted she would only eat a cupcake for breakfast. I offered her several other items and for a few hours she continued to turn her nose at all of the options. Life is fleeting - so I reached in my cabinets and whipped up these incredible cupcakes! Scott and I agree, hands down these are the best cupcakes we have ever had in our lives. These cupcakes are modified and changed but inspired by Celebrating Sweets. The icing is their recipe but doubled, it was perfect so no need to change it.
You Will Need:
1/2 cup all purpose flour
1 teaspoon baking powder
A dash of salt
.5 Cup of Apple Cinnamon Apple sauce
1/2 cup granulated sugar
4 teaspoons pure vanilla extract
8 tablespoons unsalted butter melted ( in Microwave is just fine)
1/2 cup milk
Preheat oven to 350°F I used Convection
Combine flour, baking powder, and salt.
In a large bowl, whisk apple sauce, sugar vanilla extract, butter and milk.
Add the dry ingredients to the wet ingredients and whisk until combined caution to not overtax this.
Pour the batter into 10 muffin cups.
Bake for 15 to 20 minutes minutes. You will know when they are done when you can stick a fork or toothpick in them and it comes out clean.
Cool Completely before adding Icing
For the Icing
You Will need:
1.5 cups powdered sugar
6 tablespoons unsalted butter at room temperature
1/2 teaspoon pure vanilla extract
4 teaspoons milk
Beat powdered sugar & butter until well mixed. Add vanilla extract and milk. Beat until light and fluffy. Place in fridge until ready to use.
I highly recommend trying these when they have cooled for about 10 minutes and the frosting just barely melts.
